Palascinta ( Eastern Europe delight.!!)

 Palacsinta (Pancakes filled with paprika chicken)

 One of the many vivid memories I have of my childhood, are of my step father. A gentleman no doubt, that was very familiar to culinary ways, being Hungarian, to him, food was a key factor to shaping the society. I guess it goes to say that a people that eat together...stays together, and when B invited me as a guest on this blog my thoughts shifted right to eastern Europe. Palascinta (Pronounced palachinta) is a savoury hungarian pancake, filled with meat. The meat is prepared as a stew; minced meat is fried with onions and spices like paprika, using mushrooms,chicken or sausage. The pancakes are filled with the minced meat, tucking in the ends, and are baked in the oven with paprika and sour then topped with fresh parsley.In this case I used chicken. Looks complicated?Well its never that serious look and learn.


SERVES 4
For the pancakes:
1 egg
150 gFlour
300 mlmilk
100 mlsparkling water
0.5 tspSalt
1 tspSugar
For the filling (paprikás csirke):
500 gramschicken breast fillet
1 tbspoil
1 largeonion
1 cupsour cream
1 tbspFlour
2 tspsweet paprika powder
1 Salt
1 pepper
1 pepper
1 tomato
Baked
Pancakes:
Mix 1 egg, sugar, salt, half the milk and the flour together, then slowly add and mix the rest of the milk and the water, until mixture is smooth.
Pour a teaspoon vegetable oil in a crepe pan and heat it. Cook until lightly browned, turn and cook other side.
Filling
Chop the onion finely, saute it in a small quantity of shortening until onion is glassy. Take it off the stove, then add the paprika powder, salt, pepper and chicken breast fillet (if you don`t remover pan from the stove, paprika powder might burn, and turn bitter).
As you put it back on the stove, add 2 cups of water, and cook until chicken is soft. Put the whole pepper and whole tomato in the pan, and cook it together with the chicken. If needed, add more water. When water is reduced and chicken is cooked, take the tomato and pepper out; mix flour with sour cream, and add it to the chicken. Mix together well, and cook for 3 more minutes.
Preheat oven to 180C. When paprikás csirke is ready, cut the chicken fillets in small pieces. Fill pancakes with the paprikás csirke, roll them up, and place them by each other in a casserole. Pour the onion-paprika-sour cream mixture that remained in the pan, on top of the pancakes, and place in the oven for 10 minutes.

The best part is, if you do not have an oven, you can still have them as normal stuffed pancake and the taste is just as good! This meal has been one of the never fading memories of my father, I hope you enjoy like I always do. One last thing, be extremely sensitive about the portions Palacsinta is extremely filling.
