Fried Rice and Lemon-Rosemary Fried Chicken



I just love fried chicken. If I had a choice I would eat fried chicken every day but I believe that everything should be practiced in moderation. So I was tired of the usual chicken coated in breadcrumbs or chicken coated in an eggwash. The lemon rosemary chicken was a different flavor which was well received in my house.
As for the fried rice yet again I was tired of pilau and plain rice so the fried rice was a way to introduce some different Chinese inspired flavor to my palate. Fried rice is very versatile so if you have any favourite ingredients that you would like to add feel free to do so. As I always say savoury cooking is a very instinctive experience.
These dishes may seem complicated at first glance but they are really easy and quick to make. These recipes are targeted for all those who want to make an ordinary everyday dish special. Enjoy!
 
Serves 4

Fried Rice
Ingredients:
2 cups of rice (cooked – preferably cooked the day before)
2 medium sized carrots finely chopped
½  cup of peas slightly boiled
½ teaspoon crushed garlic
2 onions finely chopped
3 eggs
Soy sauce
Beef/Pork/Chicken (boil until cooked before cooking)(optional)
Roasted Cashewnuts or any other nut of your choice (optional)

Method:
- Cook the rice the day before or atleast 5 hours before preparing the dish.
-If using beef/pork or chicken boil until cooked beforehand
-Take the finely chopped onions and garlic and fry in a little oil until the onions are transluscent in colour do this for atleast 4 minutes. After this step put the onions and garlic aside.
-Beat the 3 eggs lightly add two teaspoons of soy sauce and scramble them. After this step put the eggs aside.
-Fry for 10 minutes the peas, carrots, meat and cashewnuts in 3 tablespoons of oil, add 3 tablespoons of soy sauce.
-Take out the rice and start warming it, add 5 tablespoons of soy sauce. Then toss in all the pre -cooked ingredients. Warm the rice and voila your fried rice is ready.
-Serve hot

Lemon Rosemary Chicken
Ingredients:
1 whole chicken or pieces of chicken like 8 drumsticks or 8 chicken breasts
4 tablespoons of rosemary crushed
2 lemons
Salt to taste
2 tablespoons black pepper
Oil for frying

Method:
-Grate the lemon rind from the lemon. From the same lemon half it and squeeze out the juice. Mix the lemon rind and lemon juice and add the rosemary, salt and black pepper.
-Place the chicken in a plastic bag. In the plastic bag add the lemon rosemary marinade and shake to distribute the marinade evenly. Place the chicken in the fridge while still in the plastic bag to absorb the flavor for at least 4 hours or if possible a day before cooking.
-Once the chicken has marinated enough prepare the oil for frying.
-Deep fry the chicken until it is ready.
-Serve hot with the fried rice.
-An alternative to frying would be roasting or baking. If baking brush each piece of chicken with oil and then place it in the oven.
