To make a Tamu Tamu Marinade that goes well with your mbuzi choma or nyama choma do the following:
Mix in 500 ml of water, salt to taste, 1 tablespoon black pepper (you can adjust to make it more or less to suit your preference), 2 tablespoons beef masala or curry powder, 200ml of soy sauce. Soak the meat in the mixture and refrigerate for atleast 4hours.
Tip: when roasting the meat apply the leftover marinade on the meat periodically to keep the meat moist and tender and to let the meat absorb the yummy marinade.
